A Chrissy pud that will knock your Christmas stockings off!

Want to feel free as a partridge in a pear tree this Christmas?  You can, by making this hassle free Christmas pudding that will make your family chirp like four calling birds. Make it now and keep it in the fridge until you're ready to heat and serve it on Christmas day. (if you are under 18 and making this pud, make sure you have adult supervision  for the boozey bit)

You will need: (we made ours from natural and organic ingredients see tip below)

A 500g mixed fruit

A 125g dates

A 125g raisins

A 1/2 cup of white sugar

A 1/2 cup of brown sugar

A 125g of organic butter

B 1 teaspoon of bicarbonate of soda (bicarb soda, the exact ingredient we use in Harmoni's Kiss Roll On deodorant)

C 2 eggs (from Three French hens.....just jokes! No, actually we did use our farm eggs)

C 1 cup of organic plain flour

C 1 cup of organic self raising flour

C 1 teaspon of spice

C 1 teaspon of cinnamon

C 2 tablespoons of rum or brandy (whichever you prefer, the rum was too strong for us so we used brandy)

Tip:  Chose natural and organic, sulfate free ingredients were possible, you will really notice the quality of the pudding. We went for the least expensive brands, you will be able to get all of these ingredients at Woolworths in the Macro brand or some other brands, just read the label.

to do:

Combine all of A (chopped dried fruits, water, sugars, butter) in a saucepan over low/medium heat, stir until butter has melted, bring to boil, reduce heat, simmer uncovered for 8 minutes, stir in B (soda and watch it fix). Stand until mixture has become cold.  Stir in (eggs, sifted dry ingredients and brandy).

Steam in a well-greased 10-cup steamer for 5 hours, steam further 1.5 hours on Christmas day.

To Steam: Fill pudding mixture into well-greased steamer, cover with foil.  Put the lid firmly on steamer, then crush surplus foil firmly around the lid to help form a good seal.  Put pudding in a large saucepan or boiler with enough boiling water to come halfway up the side of the saucepan. Cover with a tight fitting lid, make sure you keep filling the saucepan with more boiling water when needed.  This pudding will store in your fridge for up to 6 weeks.

This chrissy pud comes from grandmothers and Women's Weekly recipes that have been adapted over the years. We take out the cherries from the mixed fruit and this year I didn't add the spices because no one likes the taste of them here.
